Mushroom ketchup
1.5 kg mushrooms
75g salt
1 tsp each of peppercorns, allspice
Half a tsp each of ground mace, ground ginger, ground cloves
Pinch of cinnamon
500ml vinegar
Break up mushrooms and place in a bowl with the salt overnight. Next day, rinse, drain and mash with a wooden spoon. Add vinegar and spices and simmer with lid on for 30 min. Strain through a sieve & bottle.
