Mushroom ketchup

1.5 kg mushrooms
75g salt
1 tsp each of peppercorns, allspice
Half a tsp each of ground mace, ground ginger, ground cloves
Pinch of cinnamon
500ml vinegar

Break up mushrooms and place in a bowl with the salt overnight. Next day, rinse, drain and mash with a wooden spoon. Add vinegar and spices and simmer with lid on for 30 min. Strain through a sieve & bottle.

Oooo, Green-Moo, my mouth's watering here! Every one of us loves mushrooms so it'd go down a treat in my house.

I have a couple of questions. How long does it keep for once you bottle it? I'm assuming it goes in the fridge. Does it have any kind of shelf life?

And err, not to sound dumb but how big a bottle? LOL. I'd like to try it despite being a rotten cook.

I think it's because of the salmonella scare, ammulu. Everyone's frightened to eat them in case they get sick. Another good reason to grow your own! At least you know they're safe. I'm really missing mine this year and hope next year I find better spots to plant. They were a complete and utter failure.

If you sterilise it in a water bath then your unopened bottles should have a shelf life of a couple of years. Once open, keep in the fridge. I've never tested how long it lasts in the fridge, it's been eaten too quickly LoL. I use glass 500ml empty tomato passata bottles with screw lids.

I don't know any brands but making your own ketchup is great! We used to do it when I was younger and had a garden....I actually began to prefer our ketchup to the store brands!

I'm still waiting on tomatoes, too. Mine are still green but they're starting to ripen.

I have tried to make it but I don't know what I missed or how I really made but it didn't turn out to be that good. I'm still with Heinz ketchup.

We use ketchup very infrequently, so when we do use it we tend to indulge ourselves a spot of the commercial stuff. It's got the fructose but it is a real rarity in our diet. On the other hand, fresh tomatoes yeah!

My husband loves Mexican food but he hates cilantro. If it is a well made restaurant food, he'll usually eat cilantro and not really notice it. If I need it I'll use parsley, sometimes even basil.
