Small steps forthe big leap

I suggest if you have been a non-vegetarian all your life then take small steps to convert. First week or month stop eating meat that isn't farm raised. Then stop eating red meat which is anyways not very healthy, next month eliminate another kind of meat. But while you are doing so make sure you get all your nutirents from other food. Try other cuisines like Thai or Indian that have a variety of vegetarian dishes...different tastes may help you get over the meat pangs....I think a year or so if you are really dedicated can help you make the conversion.

Take your time

I agree with Atula, While not a vegetarian myself..personal choice.. I have been a professional chef for over 20 years and know that any sudden and drastic change to your diet can have serious consequences. I would agree to change over gradually. It really depends on how far you want to go with it. I know some vegetarians who still eat the occasional portion of fish, eggs, and other varieties of protien.
A lot of people don't realize that with out protein we as humans would not have evolved the higher functions we now have. Roasting meats release certain chemicals that gave us greater functions in our evolution. and today we have greater varieties of getting our protein, which were simply not available to early humanoids.
Also if you have any food allergies it is wise to talk to your doctor or a dietitian to find out other forms of foods that would be suitable for your specific needs.

This seems like a very wise answer. I think we all agree it's best to switch over time.
