Take your time
I agree with Atula, While not a vegetarian myself..personal choice.. I have been a professional chef for over 20 years and know that any sudden and drastic change to your diet can have serious consequences. I would agree to change over gradually. It really depends on how far you want to go with it. I know some vegetarians who still eat the occasional portion of fish, eggs, and other varieties of protien.
A lot of people don't realize that with out protein we as humans would not have evolved the higher functions we now have. Roasting meats release certain chemicals that gave us greater functions in our evolution. and today we have greater varieties of getting our protein, which were simply not available to early humanoids.
Also if you have any food allergies it is wise to talk to your doctor or a dietitian to find out other forms of foods that would be suitable for your specific needs.
