I am the sustainability chair with a greek organization. I wanted to create some kind of event for earth day but I have no decent ideas. I want to get started on this early to ensure the event is actual successful. Any ideas?

Here's another idea...
Planting a tree on your frat grounds, with a little plaque that states that the tree was planted on Earth Day '09, would be a little gift for posterity. Have a little party to commemorate.

A lot of student organizations set up recycling bins, but I bet there are already several around your campus.
Workshops on basic skills like sewing, cabinet making and such Add sustainability to one's personal life as they can re-purpose and redesign used items.

How about having a party...
...that would be a 70s retro-night. You would not only be celebrating the longevity of Earth Day, but it would also be an excuse to play disco (which Greeks seem to enjoy).
