Dear Kipper1, I am a beekeeper. it has been my experience that once the bees have done their deed of dehydrating the honey and capping it, best not to mess with it. It will last indefinitely in this state ... if you increase the water content you destroy this natural preservation leaving the honey susceptible to molds and fungus. This is another good reason to keep Honey in a sealed jar.
