Other than chocolate?
Okay I know that's not really a meal. My favorite veggie meal has to be chilli, which I'll be cooking tonight in fact. Here goes my personal recipe:
aduki beans, kidney beans, fresh mushrooms, chopped tomatoes, tomato puree, a little vegetable stock, chilli powder, cumin, salt (not too much), oregano, paprika, cayenne pepper - serve it all with rice.
You have to find the right amount of spices to add and this was through trial and error in my case - you can add some cocoa powder too which gives the chilli a lovely taste. Sometimes I add a tin of baked beans to help thicken it up but you can use corn flour. You can play around with the ingredients too; sometimes I add something like courgettes or butter beans for a change.
