We get good results

With lettuce, radishes, carrots, and zuchini(sp). As we're at approx 9,200 ft. altitude, we have a short season, but we enjoy trying anyhow. Good luck with your efforts.

Yep, at our location,

with, we suppose, a very friendly soil type. Granted, they aren't prize-winners in size, but are nonetheless very tasty! Leaf lettuce is bountiful for about a month (late July-early August). Zucchini could grow in the most severe climates, we think.

regarding carrots, I don't know where you are but here in the UK they are pretty much one of the easiest vegetables to grow. You can put them anywhere, and they spread really fast if you are not careful!

Radishes and carrots?

I would think, for some reason, that these two vegetables would be very hard to grow. Are you really saying that these are among the easiest vegetables to grow?

i am seeing a lot of subterrenean veggies...

but take mole crickets and other similarly mischievous haphazards into consideration as they often thrive with such genus of plants so do a little soil environment research before planting... actually anything.

having said these, my recommendation would be artichoke, celery, onions/spring onions, asparagus, or leeks... and there is a reason for suggesting these, as they are the plants that have very few predetors... so because an effort spent then spoiled by pestilence and mishaps could be too much of a handicap, it will ever be in the easiness for you if you can plan ahead inorder to avoid foreseeable hazards
