What are some great ways to get the kids actually 'interested' in living greener instead of just doing things because I tell them to?

how about giving

them each a little plot in the garden and encouraging a little contest to see who can grow things that can be eaten.. tomatoes or carrots or something, depending on how old they are. Even planting flower seeds or herbs, and encouraging them to learn about how much water they need and awarding prizes for good results.

I loved stavy's answer...yes it would help them play and learn all at the same time...
you can ask kids to cook ameal using just organic food items...you can help them build paper mache products like that done from old newspapers...you can especially be a good example as kids are grreat observers...even if you do not tell them to do a thing,, they will certainly follow you if you they see you doing the thing.

Our Mom and Dad always admonished us kids to "Finish our food!", "Don't waste the hot water!", "Make sure you use all that you can!". We learned that everything has a future purpose, and that it's up to us to make that happen.

Verniculture?

I never met a kid that didn't like worms! When my kids were small and we were out gardening, it was a big deal to find one. I know they have small plastic composters; why not make alot of compost and check out what the worms like to eat? I think they'd be fascinated...

perhaps a trip

to a recyvcling centre, finding out what new items can be made from recycled items they put into the bins? See if they can suggest new uses for recycled stuff.

An Animal Rehabilitation Centre

We have taken our grandkids to different rehab centres, from raptors to squirrels. It can be amazing how many folks have dedicated their lives to caring for injured and ill animals. One of the most interesting rehabilitator we spoke to loved bats. Just inside her shirt (to keep it warm) was a tiny baby bat that had fallen from it's mother. Totally fascinating.. Bats are one of our grandkids' favourite animals now!

That's a great idea

Heretoday, there are many wildlife sanctuaries, aviaries, and reserach centres as well as farms caring for abandoned donkeys or other animals. Many of these places run exhibitions and displays talking about the work they do...

it is unwise...

to expect the level of consciousness from kids that will satisfy an adult... try planning trips, making good examples from yourself - and i'm sure these are suggested already... but here's one very important thing... don't keep your expectancy high about any endeavour with kids... infact, keep it very low... kids are kids afterall.
